As the mountains around Gargellen slowly settle into the evening calm, a very special experience begins at the Schafberg Hüsli: the Gargellen Gourmet Evening. At the heart of it all is Fabian Brantner—head chef, a native of Montafon, and the driving force behind the Gargellen Gourmet Evening.
Where Experience Meets Heritage
Fabian Brantner hails from Gaschurn in the Montafon. After more than a decade of gaining experience, working in a wide variety of restaurants and hotels, and embarking on work-and-travel adventures, his path led him back home. Today, he serves as head chef at the Schafberghüsli in Gargellen—right where Alpine tradition and modern cuisine come together.
For Fabian, cooking is far more than just preparing food. For him, it is both relaxation and meditation, an expression of love and appreciation. In the kitchen, he finds space for creativity, slowing down, and community. Above all, however, it is his way of treating people to a special experience while simultaneously living out his own culture.
The Idea Behind the Gargellen Gourmet Evening
The Gargellen Evening of Delights was born out of a desire to create space for creativity and fine dining despite the often stressful daily routine of mountain hospitality. A small, dedicated team brainstormed ways to treat both locals and winter guests to a special evening.
So Mario and Fabian joined forces—with the goal of creating an evening full of enjoyment, emotion, and attention to detail. The result is a culinary experience that consciously slows things down, surprises, and brings people together.
Friendship as an ingredient
For Fabian, guest chef Mario is not just a colleague, but a longtime friend. The two met during Fabian’s apprenticeship at Nova Stoba under head chef Kurt Woltsche. Many intense hours in the kitchen—marked by dedication, hard work, and passion—gave rise to a friendship that endures to this day and is now also evident in their culinary creations.
Highlights that touch the heart
The chef’s greeting is particularly close to Fabian’s heart. At first glance, “just” a Spanish croquette—but for him, a dish full of emotion. It represents vacation, lightness, friendship, and a break from everyday life.
Another highlight is the dessert: a sour cheese ice cream he developed himself. Created after much experimentation, it is a very personal statement for Fabian. As a native of Montafon, it fills him with pride to give the locals something unique, new, and at the same time regional.
